I figured having the katamari display four scrolling objects on its surface would be adequate for the 2600 version. You could even have an unevenly-balanced katamari that way. Two interlaced players, of course.
But the difficult part would be designing a wide enough array of objects for it to actually be fun to play.

Maybe use a PF as the ball, so you have both players available for "stuff"? I dunno...it's a tough trail either way!
