windows color woes

My eyes were bugging me a bit, so I decided to dink around with the color scheme. I wanted to give white-on-black a try, but realized that too many applications would give me invisible text if I tried that. So I settled for white-on-blue. Oh, what a difference! Everything was easier to read, my eyes could relax....
then I got a new message on Outlook, and it was then I realized that, by default, Outlook formats the text you type in replies to blue text. So whenever anyone replied to me, it became invisible.
ARRRRGH!
I looked, and I looked, and I couldn't find an option to disable colors in received messages, nor could I find one to change the default background color of incoming messages to something other than the Windows default.

I haven't changed it back yet. Don't wanna. I can select text with the mouse and read it that way, though I know it's only a matter of time before I miss important information because of having to do that.
Furthermore, Ghostzilla looks a lot more conspicuous because its colors never change from pale gray on bright-ass white.

Choose Mail Format tab
click Font button
Change where it reads "For replying or forwarding"
