saturnvii a few weeks ago, and think I know why everyone likes that captain.
It's misleading to say his hook is that he looks out for himself, that he's amoral, that he's a profiteer, or whatever. It misses the point of his character, which is this:
at key moments in the film, he does exactly the opposite of what the heroic Star Trek captains would have done.
Doing so allows/forces the writer to avoid many space opera cliches and conventions.
